Slender Pumpkin Bread

As I sit here in my post-feast coma (yes, still), I am trying to come up with something really clever and witty for you. 

Nope, nothing.


Not today. I can’t think of anything more than how much I want the entire loaf of this pumpkin bread. 

Mmmm….pumpkin bread….

a cup of coffee….

your favorite blanket and a fire…

(maybe some Christmas decorations making their way into your living room?)

Yeah, I would make the bread too.



(Recipe adapted from A Delightful Home)

Ingredients
2 cups whole wheat flour
1/2 tsp. sea salt
3/4 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cardamom
1/2 tsp. nutmeg
1/4 cup butter (half a stick; salted)
1/2 cup maple syrup
1 tbsp. Truvia for baking
1 egg
1 c. pumpkin puree
Pecans for top 

Directions
Preheat oven to 350° F.

Mix dry ingredients in a bowl. Set aside. Beat the wet ingredients in another bowl. Slowly add the dry mix to the wet until fully stirred. Non-stick a pan, and add dough to the pan. Garnish the top with pecans, walnuts, chocolate chips, cranberries, etc. I just used pecans.

Bake for 50 minutes and let cool. Enjoy hot with butter! Or, for extra sweetness, try adding a bit of truvia to the slice.

Healthy Cinnamon Rolls (In progress)

Happy Wednesday!
Today I made some cinnamon rolls. They sucked.
Let me explain…
I found a recipe online a while ago for these rolls and it seemed like people REALLY liked them! I went to make them, but I substituted a few things out, (almond flour→whole wheat flour) which I think was the mistake…
SO. I won’t give you my recipe, but send you over to Undressed Skeleton for the recipe. Try it out with me! I am determined to make them better :)

At least they turned out pretty :)

Thanksgiving

Hello all… Happy day before Thanksgiving eve! :) I hope you all have the blessing of spending this holiday with your loved ones. I’m heading home today for the first time since August (!) and could not be more excited.

I just wanted to wish you all a blessed holiday and a great start to the holiday season. Keep your eyes peeled for some recipes, I’ll be baking like crazy when I get home!
