Chocolate Doused Halloween Oats

And by “chocolate doused”, I mean this oatmeal is swimming in chocolate. Are we going to fight over the specifics of chocolate for breakfast? Didn’t think so :)

Saturdays are so relaxing in college. Sleeping till 10:30, enjoying my coffee and breakfast in bed… it’s a good life.

I had to finish up the rest of my canned pumpkin before it went bad (and before I bought another ;) so I decided to enjoy it in some oats!

Of course, Halloween isn’t complete without orange and black EVERYTHING. Go ahead, add as many Halloweeny chips as you want :)

Ingredients
1/2 cup quick oats
3/4-1 cup water (depending on how thick/wet you like your oats)
1/4 cup milk of choice
1/4 t pumpkin pie spice
1/4 cup canned pumpkin puree
1 T cocoa powder
1/4 t vanilla extract
Optional: chocolate chips
Directions
Combine everything except the milk and chocolate chips in a bowl. Microwave for one minute. Add more pumpkin pie spice depending on your taste preferences. Throw some chocolate chips and milk on the top and dig in!

Pumpkin Pie in a Cup

How many times have you come across the word “pumpkin” this week? My friends, it is officially fall.

To celebrate the start of the weekend, I treated myself to a Healthy Pumpkin Pie Shake. This recipe is so simple and convenient. Don’t let the word “healthy” make you turn your nose up. It is all the more flavorful and indulgent knowing that there will be no guilt following. So break out your blenders and get healthy with this scrumptious pumpkin shake!
Ingredients
2 tbsp pumpkin puree
1 cup unsweetened almond milk
A few dashes of pumpkin pie spice
A few dashes of ground cinnamon
A couple ice cubes
1 packet Truvia
1/2 tsp vanilla extract
Directions
Blend everything, except the cinnamon, together. Transfer to a cup and top with cinnamon. You could even add fat free whipped cream if you’re feeling audacious! :)
Sip and enjoy the beauty of fall and exquisite pumpkin flavor.
