Tonight I promised my mom that I would make dinner for her, and what that means is that I started brainstorming ideas around 2 this afternoon. I knew what I wanted to make before I even got home.
SO, my recipe came to life in front of my eyes, and much easier and quicker than I had anticipated, to my great relief.
First, I cooked up a cup of quinoa as my base (makes four cups). Next, I sauteed about a cup of shrimp, and then sauteed half a zucchini, 1/2 cup mushrooms, 1/4 bag of spinach, and one small tree of broccoli. Mix it all together and voila! Shrimp quinoa stir-fry. Add a dash of salt to season and you got yourself one superfood meal.
